Quinoa Salad Recipe
So with eating healthy I discovered Quinoa awhile ago and I made up a salad recipe that I absolutely love, so I thought I'd share it!
I cook a cup of Quinoa with a cup and a half of water with about a teaspoon of butter and a dash of sea salt about 20 mins at first bringing to a boil and letting simmer the rest of the time covered (makes about 3 cups.)

This is a cold salad so I let it chill all the way to room temp and then in the fridge before adding the vegetables so the they don't steam and become soggy.
Recipe -
You can add any vegetables you'd like but here's what I add:
Sometimes Celery - about 2 sticks diced
Cucumber - (cut in half and scraped with a spoon to remove the seeds) then diced
Red Onion - diced
Cherry Tomatoes - about 9-12 cut into quarters
Green onion - about 2-3 cut at an angle







Then I dice up one avocado and grab some crumbled feta (optional) and mix everything in, add a couple dashes of ground black pepper, garlic powder and sea salt!

Yum!
